“Uno, dos, tres! Vamos! Go here when in telluride if you want tasty Mexican food and quick service. Nice and casual. The music was a bit loud at 11:30 am but you gotta get the shift started somehow. That’s just my crotchety side coming out. A frequent stop when in Telluride.“

“The Adobe Inn is a restaurant and hostel located in beautiful Ridgway Colorado.I can't attest to the quality of the hostel, as I've not stayed there as a guest in probably thirty five years, but I can tell you they make a mean New Mexican meal.One of my favorite dishes is the New Mexico Beef Enchilada (although all of the enchiladas are delicious). This mountainous enchilada is plenty for the largest appetites (especially after the homemade tortilla chips, homemade salsa, and tostada or salad). Most of the dishes are served with a corn casserole that is one of the best side dishes I've ever eaten anywhere.On top of the delicious food, cozy and inviting decor, and wonderful wait staff, the house margaritas are the perfect complement to a delicious meal.I would recommend reservations, as it is a popular weekend destination.
