“I have eaten all over every state and even out of the country. This is the best quality food for what we’re eating I’ve ever had! I had the beef nachos and the taco nachos. Absolutely amazing! The shrimp tacos were the best ever! Amazing service don’t miss out on eating here.“
“The Adobe Inn is a restaurant and hostel located in beautiful Ridgway Colorado.I can't attest to the quality of the hostel, as I've not stayed there as a guest in probably thirty five years, but I can tell you they make a mean New Mexican meal.One of my favorite dishes is the New Mexico Beef Enchilada (although all of the enchiladas are delicious). This mountainous enchilada is plenty for the largest appetites (especially after the homemade tortilla chips, homemade salsa, and tostada or salad). Most of the dishes are served with a corn casserole that is one of the best side dishes I've ever eaten anywhere.On top of the delicious food, cozy and inviting decor, and wonderful wait staff, the house margaritas are the perfect complement to a delicious meal.I would recommend reservations, as it is a popular weekend destination. One of my top spots in Ridgway!“
