“Bayou is a nice Rum, kind of an insider tip. It's not broadly available in Europe. I'm referring to their Reserve Rum which is what i have at hand now. The Rum offers a rich taste with well balanced parts of cane sugar juice and Molasses. It definitely contains a significant amount of Molasses which adds that spicy, peppery flavor that Jamaican Rums are famous for without being too dominant. The casks are small and of american white oak which ofcourse is the right thing for Rums, but they seem to be still relatively young. The casks are not Ex-Bourbon or other fancy Ex-Casks from other spirits. That makes it a honest Rum although the bitterness of newer oak casks is still notable, but not to a disturbing extend. I would say this Rum offers great value for it's price. I can recommend it.“
