If you want authentic Mexican food in the Twin Cities you must try Taqueria Mi Guanajuato. When you walk in it feels like you’ve crossed the border into Mexico. Not fancy at all but so good. I had the Pozole soup which was filled with tender beef and hominy in a delicious broth. My wife had the shrimp ceviche. This was a little salt away from being really good. Overall the meats were pretty bland. However, the bright spot is that the rice and refried beans were AMAZING (they still needed salt though). Texture was great!

Today was my first time visiting this restaurant for their Taco Tuesday special. I decided to try the carnitas and al pastor tacos, and oh, how I regret not ordering more! Alongside the tacos, I also got some chips, which were quite delicious. Overall, the food was really tasty, and the deals on Tuesday are fantastic. Can't wait to go back!
