Blue Hill is a cozy outpost in Greenwich Village offering farm to table executed with confidence. The produce served here bursts with flavor, with vegetables that are some of the best at any restaurant. The crudo vegetables have inherent extra flavor without losing texture. Highlights include the trout and squash, a scallop and beet dish with good punch, shellfish with sweet potato, and leeks with crispy and creamy potato. The meal is not particularly protein-forward, but the chicken and fish receive the same attention and are equally delicious. The restaurant is INCREDIBLE with dietary restrictions; staff are well-trained and proactively careful with cross-contamination, offering gluten free bread that is probably the best ever. Service is impeccable, professional, and attentive, maintaining the right balance of care without bothering guests. Each offering is artistically arranged and sourced mostly within the northeast. While crowded, guests can speak without shouting. The vibe is fine but nothing unique about the venue. Portioning ensures no one walks away hungry. Final verdict: would return to try a new menu and recommend.

Blue Hill is a basement restaurant on Washington Place in the West Village that has been making a quiet, serious argument for farm-driven cooking since 2000.
