“Wow! This is a hidden gem that deserves a spotlight! I had no idea this place existed, and judging by what the staff said, I’m not the only one who’s been late to the party. But I'm thrilled I finally found it. Soufflé Cafe & Bistro is one of those rare spots that feels like it’s been waiting just for you to discover it.
I showed up a little before closing and they greeted us with nothing but kindness and zero hint of the negative energy you sometimes get elsewhere. That alone speaks volumes.
We ordered breakfast, and every bite was a warm hug from the kitchen. The omelet? Fluffy, flavorful, and gone way too fast. The potatoes hit that perfect crispy-soft balance, and the waffle, a chef’s kiss! Golden, crisp, and just the right amount of indulgent. I left with a blueberry cheesecake in hand (and absolutely no regrets), and let’s just say it almost didn’t survive the car ride home.
What makes this place shine isn’t just the food, it’s the heart behind it. You can feel that it’s family-run, likely by a group of sisters who clearly love what they do. It’s the kind of place where the care shows up in every detail, from the warm welcome to the perfectly executed plates. Way better than any chain restaurant, and with soul to spare.
Oh, and did I mention they have a drive-through? That’s right. Gourmet-level comfort food and a drive-through window? It’s like they knew exactly what we needed in life.
Already planning my next visit, and this time I’m diving into their drink menu. If you haven’t been yet, go. Just go. You’ll walk out full, happy, and wondering how you ever missed this little gem in the first place.“

“This was the best place to celebrate my birthday. The food was delicious and the restaurant is clean and comfy. The owner and his wife were there to personally wish me a happy birthday. Try the poached pear for dessert; one of the best desserts I’ve ever had. Congratulations Dave on a restaurant I’ll definitely visit again!“

“We don't live in the delivery area, but decided to stop by once to give Marco's a try while out and about. We quickly decided it's worth the drive. This time it was pizzoli for everyone! 7 pizzoli for 2 adults and 3 teenage boys. We all were very satisfied with our dinner.
The ambiance isn't earth-shattering by any means, but the staff are all nice and the food is great. So what we have to drive to get it; we can pretend we're pioneers or it's 2019 again. Absolutely worth it.“

“We had a table for nine after church on a Sunday so it took a while to be seated. But the wait was worth it! Wonderful atmosphere. Excellent service. Great food. We’ve never been disappointed and it remains one of our favorite places to go for the past 30 years.“

“What an adorable place with the most delicious, authentic German food we’ve ever had in the US. I had a lovely dry Riesling wine, pork weiner schnitzel with German potato salad & sauerkraut. It was a large portion & absolutely amazing. Hubby had veal weiner schnitzel & red cabbage. The veal was so tender. We loved it all & will definitely return next time we’re in New Braunfels. Make a reservation ahead of time. It’s cozy & quite popular. We didn’t have a reservation & it took about an hour to get a table, but it was really worth it!“

“Been going here for years and will continue to go (we used to come from Houston and this was always our first stop😋). Awesome owners (Kalani and Mel) and Staff! Coming here is like visiting somewhere back home - Welcoming and full of Aloha. Food is on point. Follow on FB for specials/updated menu items/highlights.
