An Absolute Masterpiece of Value, Flavor, and Vibes!
I recently experienced the 60-min, 17-course Bougie Omakase at Sushi by Bou, and to say I was blown away is an understatement. If you think a fast-paced omakase means compromising on quality, this place will completely change your mind. It is high-energy, precisely timed, and flat-out delicious.

I’m so glad we’re getting quality omakase spots in SLC! We reserved a week in advance and booked for the 12 course.
We arrived a bit confused, but asked the concierge to then discover that this is a speakeasy. It was a cute bookshelf door that led us into the room.
We got started pretty quickly. The courses are: yellowtail, tuna, prawn, salmon roe, albacore, chopped tuna, scallop, miso cod, fatty tuna, salmon, wagyu&uni, and unagi.

A speakeasy inside the Peery Hotel, got some drinks while we waited. Intimate seating of 10 with 3 chefs behind the counter, the staff were all very personable and welcoming. We did the 12-course and they explained each and every one, which were all the best sushi we've ever had! Hard to pin point which one was our favorite. The intimate room provides a cozy, speakeasy vibe with hushed tones, perfect for a romantic time. The omakase is a phenomenal, journey-like experience featuring fresh handcrafted sushi. The chefs are experienced and play with flavors excellently, making each piece amazing. The crafted cocktails are great, and mocktails have just as much care. The service is impressive, with attentive and caring staff who make the delivery entertaining. The small space by design adds to the coziness. Guests can ask to torch their own pieces. This is a reservation-only spot that does not feel like everyday dining.
