“I have passed by this food truck for several years, but just stopped in on Friday. Ordered burrito with carne asada. It was a real burrito, with rice, beans, and quality meat; a full meal wrapped in a flour tortilla, $10. Will be back.“

“I was in Koko’s again recently and had such a good time. I’ve been here before and always enjoy it, this visit was nice because Jonathan was there and he’s just genuinely great with guests. The place has such a fun but also relaxed vibe and it’s one of those spots where you end up staying longer than you planned because the atmosphere and the drinks are so good!!

We tried a couple things from the new menu and the octopus tacos were honestly amazing, the octopus was cooked perfectly and really tender, which is not easy to do, and the toppings so good together. I’ve also been to the Seabrook location before and loved it there too, and Jonathan mentioned the new location in Seabrook is opening soon. I’m already excited to go check it out this summer.“

“Amaaaaaaazing quesa birria tacos & consome. I like that you can purchase individual tacos so you can get the number you want. We wanted to drink the consome like soup! Not too salty either, perfect 👌🏼. Tasty warm chips too. They’re also SO nice here. When we left, everyone said goodbye, even the cooks. A nice break from the Seattle freeze attitude. “We had a family gathering for a late Sunday brunch at Hatch Cantina. The server was extremely aware and careful to make sure that one of our guests had their food allergies taken care of. He also carefully crafted a special nonalcoholic drink for 2 guests. The food was excellent. Several guests commented on that. The manager checked on us twice to see how everything was. More than a food truck. My overstuffed carne asada tacos were fantastic. Smokey and tender steak; warm corn tortillas, fresh pico. The giant carnitas quesadilla was excellent as well, but could have used more cheese. A large variety of excellent quality hot sauce cups were offered as I picked up our food. The chipotle was very good.

Service was quick and friendly. We hit a slow time around 2pm, but the staff have a system honed for a lunchtime crowd that must surely happen here.

This is officially a food truck/trailer, but it isn't going anywhere. There are covered outdoor tables and a decent size parking lot.

Parking is OK. There's also a Home Depot right next to the place with a large lot.“

Chips and queso is so good. The tacos are always good. Gotta say, the potato taco is my favorite. They also serve two soups and who doesn't love a warm cup of soup?
