“Best ramen EVER! We stumbled upon Uncle over a decade ago, and since then anytime we’re in CO we come for dinner. The spicy chicken ramen is hands down the best, love all of the bao buns, eggplant is my favorite, but can’t go wrong with crab or pork belly ones either. We’ve never had anything bad, service is always great too! Be sure to make a reservation.“

Service is quick when dining in, and it holds up really well for delivery too. My go to order never changes. The Khao Soi is a standout, a Northern Thai curry noodle dish with a rich vegan yellow curry broth, king trumpet mushrooms, chili jam, crispy noodles, red onion, pickled mustard greens, cilantro, and lime. It is deeply flavorful with the perfect balance of creamy, spicy, tangy, and crunchy. I always add crispy tofu to make it even more satisfying. On the side, the Chilled Tofu is simple but so well done. Silken tofu served with a soy vinaigrette, ginger scallion, and wakame. It is light, refreshing, and a perfect contrast to the bold ramen. If you like heat, add the Spicy Bomb, a roasted pepper miso paste that brings serious spice. It is no joke. One order is more than enough for a group. Oh my flerpin gerd on the food. The ramen. So warm and cozy and full of joy and vibrance. Could help anyone to the worst of times.

And then the sushi, the nagiri. I hadn't had such fresh teaching seafood since I was on the beach in Mexico years ago.

And that one where they get that smokey flavor with the torch!??? So much flavor making a little party in my mouf.

Hot (but high quality) sake and a bowl of their homemade kimchi ramen (with in-house broth) is the power lunch that strengthens the host to fight the invader. “Was recommended by a friend who lived in Japan and said this was the best ramen he had had since being there. The food was excellent! We had the miso ramen and the black garlic, along with some rolls. The ramen came out in less than ten minutes and the sushi in maybe two. Kind staff who were so attentive and helpful! “Walked from our hotel and got sat immediately. Service was super quick! I think our whole experience was about half an hour, but I have a small stomach. Lots of leftovers.

Only negative, which isn't their fault but a manufacturer issue, is that the togo container for the soup failed and the entire bottom came out. They have really GOOD bags! Lol.“

“Soooo good! I crave this place weekly! I saw bad reviews about the beef hot pot but I thought it was delicious! The beef is supposed to be cooked prior and dipped in their house sauce. The house sauce is perfect for dipping and all the veggies and add ons in the hot pot were great. I can barely finish it every time because there’s so much so it’s two meals for me. Their Thai hot pot is also one of the my favs and you can’t go wrong with anything on the menu. The staff is super friendly and helpful and the owners are so sweet and accommodating. Highly recommend!“
