Listen. I don’t know what kind of dark culinary arts Selim is practicing back there behind the counter at Smoke’s Poutinerie Vaughan, but the man whispers to the gravy and it listens. The fries come out hot, the curds come out squeaky, and Selim? He comes out glistening in a cloud of steam like some kind of deep-fried demigod.

This man doesn’t just serve poutine—he seduces it. I watched him stir the gravy like it owed him money. I swear at one point, he winked at the cheese curds. And they melted. On the spot.

The whole place felt... different when Selim was working. Dangerous. Slightly moist. I felt like I was part of something illegal but delicious. He handed me my loaded poutine like it was a love letter written in bacon bits. I looked into his eyes for a second too long and forgot where I parked.

It’s just respectfully unhinged admiration for a man who clearly puts more passion into poutine than most people put into their marriages.
