​I came here specifically looking for beef stew and was absolutely blown away. Phở Nguyên is a true family-run hidden gem that serves a dish of exceptional quality.
​The Dish (Bò Kho - Beef Stew):
I ordered the Bò Kho with Mì (egg noodles). The meat was, without exaggeration, the most tender I have ever had in a restaurant. This quality was exceeded only by the sheer quantity; there were at least six huge, incredibly tender chunks, easily eight to twelve ounces total. It was clearly a high-quality cut, either beef shank or brisket, braised to beyond perfection. It was so soft it simply fell apart, exhibiting a mastery of slow-cooking.
​The technical execution extended to every component, which is so hard to achieve in a stew. The carrot was bright orange, firm yet tender, and maintained its powerful, distinct carrot flavor-a sign of perfect timing, as it never absorbed the beef flavor. Likewise, the potato was flawlessly cooked; firm enough not to be mushy, yet soft. This incredible balance demonstrates true culinary mastery.
​The Experience:
The care and tradition here are obvious. I initially sat toward the back and noticed a slight cleaning scent (I am extremely sensitive to chemical smells, so others may not notice it). The staff was extremely accommodating when I asked to move seats, and the issue was completely forgotten and masked by the incredible aroma of the Bò Kho when it arrived. The service was warm, provided by family members who clearly take pride in their work.
​If you are looking for authentic, unforgettable Vietnamese cuisine, this place is essential. The Bò Kho is a transformative meal.

“Great pho with better than most cuts of meat. My wife got the pad thai and said she enjoyed it very much. Would recommend to friends. They were also very nice to my 2.5 year old daughter and were considerate enough to bring a small bowl for her to share some of our food with.“

“We came in about an hour before close, they welcomed us in and let us pick our seats. We were attended to promptly and got our orders in. The chef came out to ask if I was aware of what I was ordering (beef pho with only tripe, since I love tripe and my kids also love it and always steal most of it from me). I kindly let him know we did know and appreciated him making sure we knew what we were ordering. They seemed quite delighted that my young children (7 and 10) were enjoying the tripe so much. Towards the end, my daughter tried a piece of jalapeño that I had added and had been sitting in the soup and had been diluted. She decided that it was not spicy and brazenly attempted to eat a slice of raw jalapeño that came with the pho as well and immediately regretted it. She was in tears and the server was so nice and offered her candies to help with the spice. When she noticed it wasn't helping while I was trying to pay, she got the chef and he came back and gave my daughter milk that helped a bunch. They did not even charge extra, though I did offer. As we were leaving, my daughter gratefully looked up at me and said "mama, they're so kind" with her teary eyes and a smile. We will 100% be back. Super tasty food at a good price but most importantly, such lovely staff members. I am beyond grateful to them for our experience tonight.“

“5 stars!!!! We Love our Pho! (Thom) means "smells good" And that is a fact! When you walk in the door of this family restaurant you can tell it's different. Jimmy Le is a culinary master. He is a second generation business owner/chef. His pho is the best I have ever had and it's because of their secret family recipes that have been passed down from generation to generation. We have been friends since Highschool and me and the basketball players would always go to his Mom and Dads pho shop after a basketball game. It's so healing and just makes you feel good like you're giving your body exactly what it needs to repair itself. Jimmy is also a talented artist, as you sit in his small space each piece of pottery, tea cups, bowls, and urban art are so tastefully place and cultivated from local artists. His mission is to build the business of this new pho shop on Alberta and take care of his mom and dad who are reaching retirement. His family honor is incredibly inspiring and I want to support him reach his goal. Everyone has got to come and experience this family's flavor, they really have something special, it's all about high quality food. There is no question it is top tier. “I've only been here about 4 times (not in NW area often) but it is hands down one of my favorite bars in Portland proper. Every staff member I've encountered has been friendly and helpful with recs. If it's not too busy they'll also tell us process if making some of their unique flavors. As busy as it gets I have never felt rushed out. The bar snacks are from upstairs and pairs great with the Vietnamese theme of the cocktails (spring rolls and salad rolls are great). It's a small space so I'd say it's better for groups of 2-3. I've never made reservations but have gotten very lucky the times I've been, where the hostess squeezed an extra chair at bar and politely asked if a couple next to us would move one seat down that was open.
