Last night, we celebrated Joilyn's birthday at Colby's, and after not visiting for a while, I was reminded exactly why this restaurant has maintained such a strong reputation.

We kicked things off with the Spinach Artichoke Dip, and it was outstanding. The texture was perfectly creamy, and the balance of flavors was spot on. One thing I particularly appreciated was that the parmesan didn't overpower the dish, a common mistake with many spinach dips. Instead, the spinach, artichoke hearts, herbs, and cheese blended together beautifully for a rich, well-rounded appetizer.

For my entrée, I ordered the Oven Roasted Prime Rib, and it absolutely delivered.

The prime rib was tender, flavorful, and cooked just right. But what really elevated the dish was the au jus. It was rich, savory, and complemented the meat perfectly. Combined with creamy mashed potatoes and fresh broccoli, every bite felt like comfort food done right.

Joilyn decided to step outside her comfort zone and order the Cinnamon Glazed Pork Chop Filet with onion straws.

I'll admit, cinnamon and pork chop isn't a combination everyone immediately gravitates toward. But it turned out to be a fantastic choice. The pork chop was flavorful, and the crispy onion straws added the perfect contrast in texture. Most importantly, she loved it, and that's always a good sign.

Beyond the food, the service deserves recognition. Despite the restaurant being extremely busy, the staff was attentive, friendly, and efficient. Food arrived surprisingly fast, everything was spotless, and the entire experience felt well-managed from start to finish.

“Wow wow wow what an experience. Our server Bradon from the beginning went above and beyond. They thanked us immediately for having an easy drink order which set a positive and grateful tone for the meal. The food was incredibly fresh and delicious. We got the sampler appetizer with boneless wings (desert heat), cauliflower wings (spicy garlic), cheese curds and fried pickles. Then we got the beer cheese Philly cheesesteak with tater tot’s. The service was flawless with drink refills arriving right when we needed them AND without us having to ask. Our server was prompt, attentive and genuinely thorough. They even remembered I had a Togo order to place and was ready when I was to place it on time so we would have it ready when we finished! This experience was so good I had to say something to the manager who was happy to hear the praises and offer me a survey card which I was going to ask for anyways!
