“🔥 Hot Take: In a world full of chain restaurants that all start to feel the same, Colby's continues to prove why it's still one of Owensboro's premier dining destinations.
Last night, we celebrated Joilyn's birthday at Colby's, and after not visiting for a while, I was reminded exactly why this restaurant has maintained such a strong reputation.
We kicked things off with the Spinach Artichoke Dip, and it was outstanding. The texture was perfectly creamy, and the balance of flavors was spot on. One thing I particularly appreciated was that the parmesan didn't overpower the dish, a common mistake with many spinach dips. Instead, the spinach, artichoke hearts, herbs, and cheese blended together beautifully for a rich, well-rounded appetizer.
For my entrée, I ordered the Oven Roasted Prime Rib, and it absolutely delivered.
The prime rib was tender, flavorful, and cooked just right. But what really elevated the dish was the au jus. It was rich, savory, and complemented the meat perfectly. Combined with creamy mashed potatoes and fresh broccoli, every bite felt like comfort food done right.
Joilyn decided to step outside her comfort zone and order the Cinnamon Glazed Pork Chop Filet with onion straws.
I'll admit, cinnamon and pork chop isn't a combination everyone immediately gravitates toward. But it turned out to be a fantastic choice. The pork chop was flavorful, and the crispy onion straws added the perfect contrast in texture. Most importantly, she loved it, and that's always a good sign.
Beyond the food, the service deserves recognition. Despite the restaurant being extremely busy, the staff was attentive, friendly, and efficient. Food arrived surprisingly fast, everything was spotless, and the entire experience felt well-managed from start to finish.

Great food. Great service. Great atmosphere.
Some restaurants survive on reputation. Colby's continues to earn it.

“Our church senior's group enjoyed a great lunch at City Walk yesterday. I loved the perfectly fried catfish, creamy real mashed potatoes, southern style green beans and a side of strawberry cobbler. Many in our group of 18 ordered the Beef Manhattan and gave it a great review. Our servers were friendly, timely and provided exactly what we requested with smiles!“

“Having eaten there many years I hate to leave this review. I am from Tenn an always buy many loaves for gifts. We ate there Thurs and did not even recognize the sandwiches we ordered . W ordered a club and it had nothing but ham and cheese on it. Also ordered the grilled veggie sandwich , expecting the one I have always ordered. I could not eat it as it had only artichokes and some cheese on it. Where are all the old favorites ? Please go back to old menu. I did get all my bread that I ordered but plan to skip lunch when we are back.“

“I have always loved Briar Patch. Since it’s been under new management some things have changed…good and bad. The hoppin John soup is not as good as it used to be. However the salad bar is very good and fresh . Has always been. Don’t care for the croutons now. Not crunchy at all. The beverage glasses are larger now and much better. Steaks are amazing! Overall a very good place to eat at! Friendly waiters and food comes out very hot and fast!“

“I absolutely love mellow mushroom! The first time I tried it was in Fayetteville, Arkansas. When I moved to kentucky, I found this the day I met my girlfriend (now wife). The atmosphere is fantastic, the staff is very nice! The food is amazing!“

“I’ve loved old hickory for years but we’d always get the pork and mutton to go. But today I got the combination plate and the ribs and brisket were amazing! Also didn’t know their Mac and cheese was so good and creamy. I think eating in house is the way to go!!“

“While working on a film crew at the hotel, the entire Burger Theory staff went above and beyond to make our time as productive as possible. They were super friendly and accommodating with the use of their space throughout the shoot. Emily was the MVP. And special thanks to Katrina, Azalea, and Kaitlyn as well. On top of that, the food was great! I’ll definitely be back for the spicy chicken sandwich & fries!“

“We got a cook who we haven’t had before with a tattoo around his right forearm (I didn’t get his name) and he was absolutely awesome. We had been a couple other times within the past year and weren’t particularly crazy about our experience but this time the food and experience was amazing. That guy deserves a raise.“
