You want a GREAT espresso drink? The gentleman at the Cracked Kettle explained that if you let espresso sit for 15 seconds after brewing without adding sugar or milk or drinking it, it turns bitter.
Read that again.
When he was trained by a major coffee company many years ago (before they installed the $20,000 espresso machines), that was one of the first principles he was taught.
