“My wife and I are big fans of Thai cuisine, and last night we decided to try Signature Thai Bistro. We were intrigued because it occupies the same space as Supatra's, a spot we used to frequent years ago before the change in ownership. We called ahead to make a reservation and were seated promptly within a minute of our arrival. My wife follows a gluten-free vegan diet, and Thai food has always been a reliable choice for her. She called in advance to ensure options were available, and the staff was accommodating. Our server, Paul, was outstanding. He went above and beyond to ensure the kitchen was informed about my wife's dietary needs, making the experience seamless and stress-free. Here's what we ordered: Tom Kha Soup: Excellent, bursting with rich and vibrant flavors. Summer Rolls: My wife loved them--fresh and perfectly prepared. Mango Mood drink: Another hit, beautifully balanced and refreshing. Wine: A familiar choice for my wife that paired well with the meal. String Beans and Eggplant: Very delicious, with bold and flavorful seasoning. Crying Tiger: Unfortunately, this dish didn't meet my expectations and is one we wouldn't recommend. Overall, the food was excellent, aside from the Crying Tiger, and the service was exceptional. Special thanks to Paul for his attentiveness and genuine kindness. “I absolutely love this restaurant! As a celiac I have very limited options on places that I can safely eat at and I feel extremely fortunate that this is one of them. The food is exceptional and being all gluten free I can enjoy a variety of amazing dishes here. The service is also wonderful with attentive waiters who are full of life. The food was enjoyable and clearly prepared with care. Flavors were solid across the dishes, and you can tell there’s attention to quality and presentation. Service was also friendly and attentive, which made the visit comfortable.

The only area that could use a bit of improvement is the ambience. It’s not bad by any means, but it could use a little more warmth or character to elevate the overall dining experience.

Dessert was the main letdown. The portion was quite small, and it looked a bit dry, which didn’t really match the quality of the rest of the meal. It felt like an afterthought compared to everything else.
