“I wanted to share a really meaningful experience I had at Flying Biscuit Cafe. During my visit, there was a woman clearly going through a difficult mental health episode, and it created a tense and uncomfortable atmosphere for everyone inside and outside of the restaurant.

What stood out to me was how Gigi handled the situation. Instead of reacting with frustration or immediately escalating things, she approached it with such calm, compassion, and grace. You could tell she truly saw the person in front of her, not just the disruption. She gently de-escalated the situation, made sure the woman was able to eat, and ultimately helped her leave peacefully without things turning into something much bigger.

It was one of those moments that really stays with you. In a world where it’s easy to react quickly or call for backup, Gigi chose patience and humanity. That kind of care and presence is rare, and it left a lasting impression on me.

“I've been going to this Waffle House every Saturday morning for a couple of weeks now and it's always consistent, fast, and wonderful service. I've never waited more than 10-15 minutes or so to get a table even on a busy morning and the servers are always super accommodating and welcoming. Keep it up team y'all are doing great! 🙏🏽“
