So when the complimentary, and perfectly cooked, bread came to the table I asked for a side of cheese. I tasted it plain and could tell immediately that it was DOP. (Those who know what that means, understand my meaning.)I then proceeded to have the carbonara. Many restaurants (even those who claim they are Italian) in the US make this dish with cream…and that’s totally wrong. The magic of this dish is the perfect amount of pasta water and cheese that is added to the pasta and then vigorously mixed until it becomes creamy. And the egg must be tempered, or else you end up with scrambled eggs. And guess what…this restaurant knows how to do it perfectly.For dessert I had their bread pudding…another classic Italian dessert that if done correctly, is delicious and if done incorrectly is just a pile of blah. The chef here, once again, outdid himself. It was so buttery and the ratio of raisins to bread was perfect.
