“Overall, I really enjoyed the tsukemen and it definitely satisfied my craving. The pork was tender with the perfect amount of fattiness, and I especially loved the bamboo shoots.

There are two things I think could make the tsukemen a solid 5/5. First, the dipping broth could be thicker and more concentrated. It had great umami flavor, but because it was a little too soupy, the sauce didn’t cling to the noodles as well as I’d like. One of my favorite things about tsukemen in Japan is how that rich, concentrated broth coats every bite of noodles.

Second, the noodles themselves had great texture—firm and perfectly al dente—but they broke apart very easily. By the end, I had a lot of tiny broken noodle pieces, some only about half an inch long. That’s something I rarely experience with tsukemen noodles in Japan, where they tend to stay long and intact throughout the meal.

That said, the flavors were there and I left satisfied. If they could thicken up the dipping broth and improve the noodles so they hold together better, this would easily be a 5-star tsukemen for me.“

Prices are reasonable, and the staff is friendly, even if the vibe inside feels a bit cramped and could use a deeper clean. It’s a small spot, so I’d recommend takeout or delivery over dining in. For the quality of food though, it’s worth it.“

“The braised beef rice noodles at this place tastes very good. It's now my favorite and I have it once every week. The store manager is good at doing business. I visit the store nearly weekly, in just a few times he recognizes me and remembers my favorite food already. He is very friendly and trusts his customers (one time I did not carry enough money with me, the manager was nice to work out a good deal for me).
Oh I'd like to leave a minor suggestion today. If the beef stew could be a bit softer it would be perfect.“

“My friend and I got the Mentaiko soupless ramen, shishito peppers, takowasa, squid legs tempura and the hokkaido crepe. Everything was delicious. Ramen was rich and creamy with a hint of spiciness. Our appetizers were all delicious, flavorful and the squid legs were so crispy. I love the texture from the takowasa, crunchy and had a chew to it. Our servers were very sweet and helpful. I will definitely come back here if I visit again.“

“HiroNori makes a tasty bowl of ramen. I also ordered the pork buns and they were wonderful. When I got there it was about two PM and there was only one other customer at the restaurant. The service was wonderful. They provide tasty complimentary water that had fruit and berrys added to it. The tonkatsu ramen was really well made. The regular noodles were perfect. The egg was cooked perfectly. The chashu was too notch. I really liked this place and I would happily return the next time in in the area.“

“Wow! Boyfriend and I just left and what a hidden gem. I am not exaggerating when I say we ate the best Dragon Roll I've ever had. Perfectly crispy tempura, fresh, and everything made by just one employee. From taking our order to providing us with amazing food he seriously went above and beyond. We will definitely be back!“

“I got the normal broth, medium spicy, and it was very flavorful, not too spicy. Only thing is the beef shrinks a lot in size after it’s cooked so keep that in mind when filling your bowl. It’s a bit pricy, I paid about $30 for my bowl, however it was a large portion“

“Hinodeya has been our favorite ramen hangout in recent times. We go there multiple times a month. Their vegan ramen is amazing and so are all the vegan appetizers. The ramen broth is not overly salty and just right. They allow you to customize the spiciness of the ramen broth, which helps our family members choose different level of spiciness per their liking. My favorite items on the menu are spicy menma, spicy edamame, and yuzu ramen. Their tabera sauce is truly amazing!! The restaurant gets crowded a lot because their food and service are so great. “I went in for lunch at 12 on Tuesday. It was just me and there was no wait. The ramen was pretty decent. It wasn't the best I've ever had, but better than average. I've tried most of the top spots in the bay area (Ramen Dojo, Ramen Parlor, Ramen Nagi, Marufuku, HiroNori etc.). I had the Tonkatsu Ramen, with Kale noodles, and Spicy Sauce on the side. Overall it was a solid ramen and I could see myself going back in the future since I work nearby. Prices are standard, and service was good. You order at your table with a tablet. Like others have said, its a small place so probably not a good idea to go with a large group.“

“Best and most underrated ramen in the Bay! The broth is so flavorful, the texture of the noodles is perfect, and the pork belly is so crispy. Good portions for the price and the owners/service are great. My personal fav is the TanTan! Can be a little salty so request less salt :)“
