“This food truck is incredible! They are always fresh to order so the food is of great quality! They have quesadillas, burritos, tacos and other great stuff. I always get the steak burrito....highly recommend! My kids get the quesadilla and it comes with a little side salad that is really great too! You get a lot of food for a great price as well.

Parking: Parking spots are limited but I've never had to park far away.

“This place is amazingggg. I came here on my lunch break, really wanted some Mexican food and this place did not disappoint. I got a fajita burrito with asada, a side of sour cream (which they asked if I'd like in the burrito, yes please!) Okay, listen. I went to Café Rio with some fellow moms while picking up my daughter from a church camp, and I don’t know if it was the lack of sleep, the emotional mom high from watching her grow up too fast, or the fact that I hadn't eaten a real meal in 48 hours—but this food slapped. Like, full-on soul-hug, crying-in-the-parking-lot, “maybe I am doing okay” level delicious.

I ordered the Sweet Pork Salad because I’m a creature of habit and heard whispers of its legendary status. Y’all. The rumors are TRUE. That pork was so tender it practically apologized for every tantrum my kids have ever thrown. The rice and beans were seasoned to perfection, and don’t even get me started on the tomatillo ranch—I would drink it out of a Hydro Flask if society wouldn’t judge me.

And yes, I got queso. Because I’m a grown woman and I deserve joy.

The line was long but moved fast, like a well-oiled burrito assembly line. The staff didn’t judge me for being that person holding up the line asking for “extra extra dressing.” Bless them.

The vibes? Loud, slightly chaotic, and full of teens, toddlers, and tired parents—aka: my natural habitat.
The aftermath? I was full, happy, and dramatically texting my husband:
“WHY HAVE WE NOT BEEN EATING HERE EVERY WEEK?!”

🍼Pro Tip: If you’re a mom on a road trip, emotionally depleted from a week of solo parenting or camp pickup chaos—Café Rio is the serotonin booster you didn’t know you needed. Also, get a second dressing. Always.

Would eat again. Would cry over sweet pork again. Would 100% recommend to other exhausted, fabulous moms living off caffeine and prayer.

They have a huge variety of food items to choose from. My favorite is the lengua tacos. They are big and filling. One is plenty for me unless I'm starving, then I go for two and then I'm too full and say I should have just stuck to one. LOL The lengua is the best I've ever tasted. It's so tender and delicious. “I tried the mangonada it’s my second time. The first time I tried it, it was really good 💯.The only thing I disliked is that the mango ice cream is not as it used to before, they must have changed their recipe, now the ice cream for the mangonada is like a yogurt type with small chunks of mango.

“Qdoba is the ONLY fast food place I’ll eat. There are plenty near where I live, so that’s convenient.
But Why is it my Only Fast Food?
• Consistency—they have that down.
• Healthy Choices—there are bins of “heart attack on a plate” type food (red meat and cheese), but I ignore those in favor of chicken, tasty veggies, guac, brown rice, black beans, etc. Lots to choose from, so you can easily tailor your burrito to your taste. Try that at the crappy burger joints that people kill themselves with. Heart disease is the number one medical killer, and eating something that is more than a third animal fat is slow, painful suicide.
• Quality—I’m originally from the west coast, where authentic burritos can be found pretty easily. No so here in my Colorado town. Just because someone is from Mexico doesn’t mean they know how to cook. Qdoba has, while not authentic east LA flavors, at least pretty good flavors. They’ve figured it out.
• Price—a burrito is a little over $10 at this writing. Covid raised all food prices and greedy companies refuse to lower them. So, these “giant tubes of food” as I call them (for best results insert in mouth and squeeze from the bottom up -) are a relative bargain.
• Calorie Counts Clearly Displayed. ++
• Speed—I’m retired so can go when others aren’t there, but still, for made to order food, it’s fast.

I wish they’d bring whole wheat tortillas back. But you can’t have everything.

Cold ingredients take away flavor, so I always get my burritos to go and put them in a frying pan for a few minutes, turning to brown the tortilla. Then it’s hot and tasty.“
