I’m not sure how I even found this restaurant but I’m sure part of the attraction was a black owned business in Aspen. MAWA’s Kitchen is like striking gold in the mountains of Colorado. Every dish was excellent, from the Brussel Sprout Caesar to the Two Roots Sautéed Greens, pure heaven in your mouth. For our entrees Conrad chose the Red Snapper. It was served on top of some Zaalouk, which is a Moroccan salad of cooked eggplant and tomatoes. Delicious. I chose the West African Gumbo. The flavors meshed together perfectly and had a little spicy Andouille sausage to kick it up a notch. The servers were great and they even gave me a dessert for my birthday. “One of my favorite restaurants in the US is Daniel in NYC. Bosq reminds me of that restaurant with the quality and creativity of dishes and the warm and inviting feeling you get dining there. The staff, Natalie in our case, and Sergei made my wife and me feel as if we were regulars. In fact, it was their warmth that set the mood for a spectacular experience. We started our first date with Bosq's 7-course chef tasting with the pairing selected by Nick. Now Nick is an interesting sommelier. He is knowledgeable and approachable. At the end of our gastronomic experience, Chef Barcley introduced himself, as he appeared to do with all of the diners. I explained to Chef Barclay, that his cooking reminded me of Chef Daniel Boulud. He was slightly taken aback and then stated he has worked with Chef Boulod. Chef Barcley's cooking is world class. My wife and I enjoyed it so much, I canceled one of our reservations to dine at Bosq twice during our week long stay in Aspen. “As far an on-mountain “fast-food” goes, this place is up there! The Apple Strudel, which was highly recommended, was good, but could have been warmer. I had the hot-dog, very good and bigger than a normal hot-dog. Staff were friendly and the service was fast. Hard to find seating during prime lunch hours, but we managed to find a good seat. “I was visiting Snowmass in late July and decided to get a mid week dinner here. I had the best Middle Eastern Salad. It was easily enough for 2 with greens, hummus, feta, cucumber, tomato, black olives and couscous plus pita on the side and balsamic dressing. What was especially nice was the outdoor dining on the upstairs balcony. They also have outdoor tables with umbrellas along the sidewalk.

“We had an amazing anniversary dinner tonight. The evening started with a warm greetings by the staff, with 3 of them wishing us a happy anniversary. We had a delicious dinner starting with the butter lettuce salad followed by our pork entrees. Service was great-our waiter was attentive and water glasses kept full and they swept the crumbs off the table after the dinner course. They have a great wine list as well as some excellent cocktails. We happen to be gluten free and we had the best ever gluten free bread along with their own freshly churned butter. The pork entree was delicious and very creative with a delicious reduction sauce. Finally they brought us dessert-an amazing pavlova plus home made sorbet. Everything was so fresh and delicately prepared. This restaurant ranks right up there with Michelin 1 and 2 star restaurants we happen have eaten in elsewhere. Overall, highly recommended for a wonderful dinner.“

The menu is tried and tested over the decades and there are many favourites dishes that I look forward to going back to.

In the mains the Lamb rack is a must, as is the Osso Bucca and the Pork Cutlet is Huge

I had the special of the day a prawn shrimp Rissottol and having travelled the world I thought it was the best seafood risotto I have ever had and would beat anything I have had in France or Italy. Exquisite as we told Jody the owner who is always there to welcome guests.

The wine list is one of the best in Aspen with amazing wines that are from around the world. I am always happy to treat my self to an old French under the guidance of the expert sommelier Alexandre who has true knowledge of the wines that are in the wine list.

That being said, OpenTable should update this and make sure they close off the times if it is not open.
