“The hard part is entrance. You go through a gate, to the end to a guest parking then enter the building and turn right then left. After a confusing entrance there is a very quiet restaurant with nice spacing, great for having conversations. Server was great and helpful with choosing appetizers, entrees and wine. Pasta was on-point and very balanced. All in all, a great place for both a romantic date or a business dinner. Will return.“

“Can’t wait to come back! Every meal at this restaurant is worth the price. We came and were able to utilize the Thursday deals for our group. Tried a little of lost things and not a single menu item disappointed. So grateful to have found this place and hope to make it back as soon as possible. Our server Sophia was not only attentive but thoughtful and kind hearted. She was a pivotable part of our experience and dare I say the meal itself was more then just a meal. We left feeling full, healthy and emotionally refreshed. Will be counting down till our next visit!“

“Stopped here during a layover at MIA and was honestly surprised at how good the food was for an airport restaurant. The portions are huge and everything tasted fresh and well seasoned. I had the jerk chicken with rice and plantains, and the flavors were excellent with just the right amount of spice.

The staff was friendly and patient while explaining the menu, especially since there are a lot of great options to choose from. Seating is limited, but the food definitely makes it worth the stop. Easily one of the best meals I’ve had at an airport.“

“My wife and I recently had the pleasure of trying the tasting menu here, and it was one of the best meals we’ve had in a long time. Palma is a truly special place. Along with Ariette, it stands out as one of the two best restaurants in Miami.

The food is outstanding. Creative, deeply flavorful, and beautifully presented. The menu changes monthly, which makes every visit feel fresh and worth repeating. There’s not much else to say other than bravo.

A very special mention goes to the sommelier. I didn’t catch his name, but his talent is undeniable. If the food was among the best we’ve had, the wine pairing was easily the best we’ve ever experienced. I typically avoid funky, skin-contact, or natural wines, but this pairing completely changed my perspective. Each wine was not only delicious but genuinely interesting and full of character, and every pairing felt thoughtful and precise. These are wines I would happily add to a home cellar. Truly incredible.

The value is also remarkable. We paid around $200 per person including the wine pairing, which feels like a steal. If this restaurant were in Brickell or Miami Beach, the price would likely be double or triple. Even then, it would still be worth it.

“Truly remarkable. We enjoyed the 9-course tasting menu with the wine pairing and waygu enhancement, putting dinner at $375pp including tax and tip. Worth every penny. Our primary server, Gabriela, was fantastic although several other staff members delivered our dishes, including both managers and a member of the chef’s team. I enjoyed the variance as it allows one to meet several members of the staff. Of the nine wines there was one I didn’t care for so, when asked how I liked it and said, “not so much” it was immediately replaced with a choice between two fine wines. It’s in these moments you understand the staff are true professionals providing the best dining experience possible. Gabriela, or Gaby as she prefers to be called, is a true professional The only marks against is the dress code. One gentleman at the bar was in a T-shirt and a baseball cap. Later two gentleman sat at a high top near the door, both in baseball caps. Also, the bartender was wearing a tank-top with the back cutout, something one would expect at a beach bar. The stark contrast between she and the very smartly dressed manager, Jonathan Smith, in a suit and tie, was noticeable. I’m old school dining with my 94 year old father who is really old school so my critique of attire when we’re only here for dinner may seem displaced. My apologies. For anyone looking for a remarkable dining experience in Miami Beach I highly recommend Stubborn Seed. You will leave full and an experience you’ll remember forever“

Whereas many restaurants these days won't offer reservations for parties of one, they not only took the reservation, but also messaged me to see if I was OK sitting at the chefs counter or if I would prefer a table. Like Michelin starred Boia De, they offered me ½ portions of appetizers so I could try more of the menu (I did not have to ask for this, the waitress spontaneously offered). I found the food well-prepared and elegant. Great flavors with simple presentations and preparations. The lime leaf infused ganache on the dessert was the most novel thing I've tried this year.
