I’m coeliac and had questions about the menu and whether one of the dishes could be augmented to be gluten free. Our server, Bill, and the chef, Damian, were extremely helpful and gave me full confidence that my meal would be safe. I had an ahi poke bowl with a few minor tweaks. The bowl was gorgeous, fresh and very tasty! I really appreciated their care and the quality of the dish. Most of my family had burgers and were all raving about them.“

“Backbone was an incredible dining experience from start to finish. I started with the tuna tartare, which was incredibly fresh, beautifully presented, and had an amazing balance of flavors and textures. From there, I had the corn agnolotti, which was easily one of the highlights of the night. The pasta was perfectly cooked, and the delicate, flavorful sauce complemented the sweetness of the corn beautifully.

For my main course, I had the steak and fries. The steak was cooked perfectly, incredibly tender, and packed with flavor, while the fries were crispy and seriously addictive. Everything on the plate worked perfectly together.

I finished with key lime and scoop of coconut sorbet, which was just as impressive and the perfect ending to an already fantastic meal. Every dish was beautifully presented and tasted every bit as good as it looked.

What made the experience even better were the people. Every employee I interacted with was genuinely friendly, welcoming, and attentive. The chef was also incredibly nice and personable, which added such a special touch to the evening. You can tell there’s real passion behind what they’re doing, both in the kitchen and in the way they treat their guests.

The attention to detail at Backbone really stood out to me. The atmosphere was stylish and inviting, the service was exceptional, and the entire meal flowed perfectly from one course to the next.

Backbone is absolutely a restaurant I’ll be coming back to. From the tuna tartare and corn agnolotti to the steak, dessert, and amazing hospitality, the entire experience was outstanding. One of the best meals I’ve had in a while and an easy five stars. Highly recommend!“

We used to have a fire table like yours, so dining here always carries a sense of home. Last night we brought friends, and they said, ‘This makes it hard to go out to eat in Monrovia—our restaurants cut corners with cheap ingredients and fast turnover.’ What your chefs create is the opposite: dishes with not just incredible flavor but extraordinary texture and detail. Their expertise is off the charts, and I highly recommend.“

I ordered the Tremendous Burger, and it definitely lived up to the name. Juicy, flavorful, and one of those burgers I'd happily order again. They were great at making seating for our large party (we did make reservations in advance).
The hummus plate had lots of beautiful flavors and veggies that melded perfectly. The roasted cauliflower was especially delicious, with a sumac olive oil (I think, I'm assuming by taste), and a tahina, shug, amba dipping sauce.
The shakshuka was peppery and filling.
