“One of my favorite restaurants in the US is Daniel in NYC. Bosq reminds me of that restaurant with the quality and creativity of dishes and the warm and inviting feeling you get dining there. The staff, Natalie in our case, and Sergei made my wife and me feel as if we were regulars. In fact, it was their warmth that set the mood for a spectacular experience. We started our first date with Bosq's 7-course chef tasting with the pairing selected by Nick. Now Nick is an interesting sommelier. He is knowledgeable and approachable. At the end of our gastronomic experience, Chef Barcley introduced himself, as he appeared to do with all of the diners. I explained to Chef Barclay, that his cooking reminded me of Chef Daniel Boulud. He was slightly taken aback and then stated he has worked with Chef Boulod. Chef Barcley's cooking is world class. My wife and I enjoyed it so much, I canceled one of our reservations to dine at Bosq twice during our week long stay in Aspen. If you want world class food and spectacular service, I highly recommend Bosq. If we lived near Aspen, we would most certainly be regulars!”

“Very impressed. They got a lot of the authentic flavors perfectly. We loved the vegetable spring rolls, octopus, beef fried rice, and corn fritter. The chicken satay didn’t really hit for us, and while it didn’t really taste Indonesian, the beef satay was delicious! The chef also made us banana fritters that were so perfectly crispy and sweet they brought me back to my childhood.

“If you happen to be staying at The Little Nell or visiting Aspen make brunch reservations at Element 47. Pancake lovers: try the Lemon Soufflé Pancakes, there’s just the right amount of citrus in these decadent fluffy pancakes. Vegans & avo toast lovers try the Avocado Toast. Plentiful, perfectly seasoned mashed avocado with feta & pickled onions on house baked bread is superb. Another vegan option is the Warrior Pudding Bowl, this healthy dish is super flavorful, light yet filling. Ingredients include quinoa, hemp, chia & oat. The Nell’s famous Hot Cocoa is rich, creamy & a quintessential tribute to Valrhona’s top of the heap chocolate. The recipe includes half & half, sugar, Valrhona cocoa powder & chocolate. It’s unreal! I’m a pastry fanatic so I always can’t wait to hear what flavor hand pie (pop tart esque) is on the menu. I also stash one in my ski back pack, makes the chairlift ride even more fun!”

“I recently had dinner at St. Ambrose in Aspen, and it was an outstanding experience from start to finish. The service was impeccable—attentive, polished, and perfectly paced throughout the evening.

The standout dishes were truly exceptional. The Paccheri Rosa, with roasted cherry tomatoes, white wine, peperoncino, shallots, a touch of cream, and 24-month aged Parmigiano-Reggiano, was rich, balanced, and deeply flavorful without feeling heavy.

The Sant Ambroeus Ravioli, handcrafted spinach and ricotta ravioli finished with sage and Parmigiano-Reggiano, was equally impressive—simple, refined, and executed at a very high level.

And without question, the highlight of the entire meal was the tiramisu, which was the best I’ve ever had in my life. Perfect texture, perfectly balanced sweetness, and an incredibly satisfying finish to the meal.

These three dishes—the Paccheri Rosa, the ravioli, and the tiramisu—are absolute must-orders and easily the highlights of the menu.

Overall, a fantastic dining experience. I would absolutely recommend St. Ambrose and will definitely be returning.”

“’m always looking for some place different to eat, to stay, to do, when we travel. I’m not sure how I even found this restaurant but I’m sure part of the attraction was a black owned business in Aspen. MAWA’s Kitchen is like striking gold in the mountains of Colorado. Every dish was excellent, from the Brussel Sprout Caesar to the Two Roots Sautéed Greens, pure heaven in your mouth. For our entrees Conrad chose the Red Snapper. It was served on top of some Zaalouk, which is a Moroccan salad of cooked eggplant and tomatoes. Delicious. I chose the West African Gumbo. The flavors meshed together perfectly and had a little spicy Andouille sausage to kick it up a notch. The servers were great and they even gave me a dessert for my birthday. I would definitely recommend this for a great dining experience. ⭐️⭐️⭐️⭐️⭐️ Stopped by for brunch today, another excellent meal. Got to meet Mawa. Such a great place. “An amazing choice in Aspen. We had lamb meatballs, rack of lamb, French Onion soup, pork chops (huge serving!), and pasta arrabbiata followed by the chocolate mousse parfait and crème brûlée. Everything was amazing. The wine list is extensive and the sommelier (Nick) was very helpful with finding the right wine accompaniment. You could even be treated with a celebrity sighting with your meal (Kevin Costner was three tables over. Just remember that the “Aspen way” is to never approach - allow them to be normal people when they are here.) Don't forget to end your evening with a drink at the bar with the Aussie bartender duo of Scotty and Sammy at the bar. 🥂🍾 Bottom line: You won't be disappointed! Food, staff, vibe... 🎯”

“Had an awesome lunch at Jüs Café and will absolutely be back. I ordered the Poulet sandwich and it was one of the best things I’ve eaten in a long time. Perfectly balanced and super fresh — made with a lemon aioli instead of being weighed down by mayo, plus currants, raisins, celery… just delicious and really thoughtfully done.

My housemates ordered the truffle egg salad sandwich — twice — which tells you everything. They were raving about it from the first bite.

Prices are very reasonable considering this is Aspen/Snowmass, the staff was genuinely friendly, and the space is comfortable with a great view of the mountains. A perfect spot for a casual but high-quality lunch. Highly recommend.”

Food - so healthy and wholesome! My plate of farmers omelette came with a rainbow of ingredients, vibrant colors, not overcooked. Matcha latte was well prepared (unfortunately they did not have soy milk so I went with oat milk which doesn’t have the same tinge of sweetness that really makes this drink for me. FYI the other options were almond milk or coconut milk)

Collaborated by the stories in the cookbook the owner wrote, I get the sense that everything served here bears her “this is good for you” seal of approval. And I agree!
