“Tried this very special “takeout only omakase sushi box”, Edomae style ( use cured/aged fish, and red vinegar seasoning in rice). The executive chef, chef Ryo, has worked in many renowned restaurant including Michelin star sushi restaurant “Sushi Sho”. Before joining this new restaurant “Ltd Edition Sushi” in capitol hill, he worked side by side with chef Nakazawa-an icon of edomae style in Japan, at both Sushi Sho Tokyo and Sushi Sho Honolulu. The sushi omakase box and kids fish bowl are both very sophisticated, the curing and aging techniques brings out the deep complex flavor of each fish and gives each fish this extra tender texture, the taste profile as such is hard to find here in Seattle. Chef sake flight ( we tried Haneya Junmai Ginjo and Hidakami Junmai today), one is floral and one on the dry side, pair with his sushi very well. Sushi is in a very elegant wooden box and everything you will need for the experience including a separate soy sauce dipping dish is prepared for the guest. This is, truly, a perfect omakase takeout experience. 💕💕😋“

“WHAT AN EXPERIENCE!!!

This, in my opinion, is the best sushi restaurant in Seattle. Everything single dish, every single sushi, was perfect. It was clear how much details they put in, to making this an excellent culinary experience.

From the texture of the sushi, the flavor of the fish, the sushi rice, the amount of seasoning and wasabi; the chefs played various combinations that really harmonized and highlighted each ingredients.

We got the Omakasei with pairings. It was so good that even though we were full, we added 2 additionals sushi at the end of the night.

I regret not trying this place sooner.“

“This place was incredible! I soon as I walked in I was greeted with smiling faces. Seated at the bar immediately. Engaged in some friendly conversation with the staff. I pre studied the menu and ordered immediately. Had a beer in 1 minute and food within 15 minutes of walking in the door. The sushi A combo is a winner! Spider roll was stellar, the fish was very fresh and the technique was top teir! Honestly really enjoyed the experience and wished I lived in the area so I could visit regularly“

“We stopped by after our daughter mentioned this place, and I’m so glad we did. The restaurant has a great Asian vibe, which I loved, and we were lucky enough to get seated right away in the last open booth. Service started off strong with water brought out immediately, and the waiter clearly explained the menu options.

We ordered à la carte. The food does take some time and comes out as it’s ready, so it’s best to order everything at once. But the wait was worth it. The fish was incredibly fresh and full of flavor. I’m gluten-free and didn’t use any sauce, and everything still tasted amazing.

The staff was friendly, attentive, and very on top of things. They’ve been open about a year, and it really shows that they’ve maintained both quality and service — something not all places do.

For two people, we had three rolls, some nigiri and sashimi, soup, edamame, and two teas. With tip, it came out to around $100, which felt very reasonable. We’ll definitely be back.“

Because it's the turn of the season we got lucky to have some new dishes.
Everything is totally fresh and light and the fish dishes were up to Chef Taneda in how to incorporate new flavors with fish that is in season. I absolutely love uni and I'm glad there were a few dishes with it. I also am not a huge fan of squid because usually it's so rubbery but this has been the best I've ever had! It was creamy and light!!!

Everyone was so so friendly and I loved talking to the chef! Also other reviews said you had to go upstairs for the bathroom but they have their own bathroom in the restaurant with a Japanese toilet that is heated and I loved it haha, it reminded me of Japan.

I loved all of the things I tried along with the sake pairing. I highly recommend going, I left happy and full!

I was lucky enough to snag a reservation after I REALLY tried. Here is a tip to book as they fill up in less than a minute:
Log into your tock account and go to the calendar day you want to go to and around the time so everything is pre set. Literally as SOON as it turns 11, I refreshed my phone and got my day and time! Everything was already there so I didn't have to go clicking through. That was my trick and it worked for me the first time I ever tried it! Good luck!“
